Air Fryer Churros

                        Air Fryer Churros
            Ingredients for 5-6 Servings
- 
    1/2 cup + 2 TbspGranulated sugar, divided
- 
    3/4 tspGround cinnamon, divided
- 
    1/2 cupWater
- 
    1/2 cupWhole milk
- 
    1 tspVanilla
- 
    8 TbspUnsalted butter, cut into cubes
- 
    1/4 tspSalt
- 
    1 1/4 cupsAll purpose flour, spooned and leveled

    2Large eggs, cold

Method
-             Combine water, milk, vanilla, butter, salt, 2 tbsp sugar, and ¼ tsp cinnamon into a medium pot and medium heat. Bring the mixture to a boil, stirring frequently, then lower heat.
-             Add in flour and mix continuously until fully incorporated. Mixture should form a thick, smooth ball and appears to dry out slightly in about 2-3 minutes.
-             Once thickened, transfer mixture to a large bowl and beat for 2-3 minutes to cool, then add in eggs one at a time and beat again. Dough should begin form and be smooth and creamy.
-             Add dough into a piping bag with a star tip (tip is optional), then chill for 20-30 minutes. Once cooled, pipe stripes of dough into a lined air fryer basket being mindful not to overcrowd.
-             Air fry until golden, 8 to 10 minutes at 380 degrees F.
-             In a medium shallow bowl, combine 1/2 cup sugar and 1/2 teaspoon cinnamon. Set aside. Immediately out of the air fryer, roll churros in the cinnamon-sugar mixture.
-             Repeat with remaining dough.
